Foxnuts (Makhana)

Long before superfoods became popular, Makhana or Fox nuts thrived quietly in the ponds of Bihar, India, particularly in Madhubani. Over 200 years ago, local farmers discovered its unique seeds and mastered traditional methods of harvesting, drying and popping them into the crunchy, nutrient-rich snack known today.
Over time, it spread beyond Madhubani across Bihar and India, earning recognition as both a food and a health treasure.
Today, while modern processing makes it widely available, the dedication and skill of those early farmers continue to define Fox-nut’s enduring legacy in Indian agriculture and cuisine.

The history of coffee in India dates back to the 1600s, when the pilgrim Baba Budan brought seven coffee seeds from Yemen and planted them in the Chandragiri hills of present-day Chikmagalur district in Karnataka.
